Shabu-Shabu
Recipe
Use a heavy medium to large pot and fill it with 10 cm of water approximately.
Bring water to a boil.
Add vegetables to the pot and bring to a gentle boil. Cook for 3-5 minutes.
Cook individual slices of beef in the broth for 5 seconds.
Dip the meat and vegetables with Ponzu sauce.
Shabu-Shabu is a traditional Japanese-style hot pot where assorted ingredients such as meat and vegetables are cooked in hot water with a piece of kelp (optional). Shabu-shabu gets its name from the Japanese onomatopoeia for “swish, swish,” as each piece of meat is lightly swished around in boiling broth before eating.
Unlike other types of hot pot, where the ingredients are cooked together before serving, Shabu-Shabu ingredients are served raw and cooked table-side during the meal, similar to fondue.
After the meat is cooked, dip it in Ponzu or sesame sauce to complete your experience.
